Hummus is a delicious spread made from garbanzo beans (same as chickpeas). It’s popular in the Middle East and is a great source of protein and fiber. There are many different flavors, but I like making garlic hummus. Other popular flavors are eggplant, lemon, roasted red pepper or sun-dried tomato hummus.
Hummus can be served in many different ways. It can be eaten with bread, crackers, pita, falafel, chicken, fish, eggplant or vegetables (broccoli is one of my favorite).
You will need:
3 cups dry garbanzo beans
3/4 cup tahini
olive oil
3 lemons, juiced
6 cloves garlic, minced
1/2 bunch parsley, chopped
salt
cumin
1 medium-large red chili pepper, finely chopped
*Soak beans overnight in a large bowl of water- they will double or triple in size
*Simmer garbanzo beans for 2-2 1/2 hours until soft
*Drain garbanzo beans well
*Mash beans
*Add all other ingredients and mix
*Add a little water until it is the consistency you want
I like my hummus thicker, so I add just a little water. I like to mash the garbanzo beans by hand to add consistency, but you can also use an electric mixer. It can be topped with pine nuts, drizzled with olive oil, tomatoes, cucumber, onions, mushrooms or other spices you like.
